Major Sequence Not Automatically Showing

Working within PP5.5 
 
I have been editing a project within a single sequence, but I needed to open up a new sequence within that project otherwise things would have started to get complicated (with the intention of cutting / pasting the second edited sequence into the first / original). 
 
So I File > Create New Sequence'd to open a new sequence and begin work.
 
I saved the project, closed and left for lunch.
 
Upon return and opening the project, all that is visible is Sequence 2.
 
Sequence 1 (original with most of the work) isn't tab'd as I would have suspected (above the timeline) next to Sequence 2. Within the project bin, Sequence 1 is present and when double clicked, opens up in the timeline. IS there any way to ensure Sequence 1 (the main) always opens up first.

Not 100% sure I understand what you mean. A screenshot would help...
 
But try this: Have everything arranged the way you want it, with Sequences 1 and 2 in their respectively correct place.
Now close Premiere.
When you re-open it they should still be where you left them.

I say should...

The last used sequence will open when you start the program. Anything else would be stupidly specific, many people have projects with dozens of sequences in. This is why there are bins, your supposed to use the bins to keep the project organised.
 
probably reading a good book will help you a lot. If your not confortable with basic interface / workflow things like bin organisation and nested sequences then you will learn a lot of useful stuff from some basic tutorials / books.

Maybe you need to trash your preferences and start again.
 
Start Premiere while holding down the ALT key.
This will trash any preferences you've created, and reset Premiere to the default settings. If you changed things like the location of scratch discs and so on you'll need to customise them again.
Trashing the prefs is standard practice for any Adobe application that starts behaving weird.

Not necessarily. The preference files have been known to get corrupted or confused of their own accord and weird behaviour is the result!
Now you know how to fix it. Same goes for lots of other programs.
