Anyone know what the real-world difference would be if I was to get a Xeon processor vs a Hex-Core i7-3930K vs a Core i7-3770K.

The new Intel Haswell Processors will be released May/June-ish. It's not the new processor as much as the new motherboards that are going to benefit editors: built in Thunberbolt on the mainboard is going to be great for external drives, storage, etc.
CUDA interesting at the moment: Premiere Pro next is supposed to be as happy with OpenCL as with CUDA, meaning Radeon GPUs might be better bang for buck.
Also Premiere Pro next takes advantage of multiple GPUs. so SLI possibility.
Of course all this moot until it's out and tested in the real world.
Meanwhile if you have to buy now, then hex core better than quad core. More cores = more processing power = real world advantage in anything that crunches numbers, so encoding of any sort, and non-CUDA enabled effects.
