Is it possible to put a 2 hour movie on one 4.7gb disk?
Yes but your video quality will go down, commercial Hollywood DVD's are often dual layer, hence twice the room.
I'm archiving some VHS at the moment at 3400 for 3+ hours
5 to 6000 is better though

My bitrate calculator says that a bitrate of 4861 will allow 120 minutes on a single 4.7gb disc.
To be safe I would reduce that rate to 4750 just to be sure.
SIFI
Another benchmark
Ulead Media Studio Pro 7, AC-3 (Typo edited from AC-2, Thanks Ruffkut ) audio, 2 hours 12 mins at 4900 VBR
Video usually ends up at 4.27GB allowing 1.7GB for menus etc, although the final DVD ends up at 4.3GB.

John, what's AC-2 Audio ? Do you mean MPEG2, or AC-3 ?
To do this use DVD Decrypter and DVD20ne and than burn with what ever you use. ( copy to DVD works straight from DVD2one.
If you start of looking at www.dvddecrypter.com you will find a great deal of information and this programme is free. There are trials for the others but really it is best to purchase them, they are not expensive. It is worth a look.
All the best, Ron.
